Easy PB Banana Overnight Oats – 5 Min!

Description

The best PB banana overnight oats! 5 minutes the night before and creamy peanut butter banana oatmeal will be ready for you in the morning!


Ingredients

Units Scale
  • 1/2 cup quick cooking oats (sub rolled/quick cooking steel cut oats if desired)
  • 1 tbsp chia seeds
  • 3/4 cup oat milk (or plant milk of choice)
  • 3/4 tbsp maple syrup
  • 2 tbsp peanut butter
  • 1/2 banana, sliced*
  • 1 1/2 tbsp mini vegan chocolate chips
  • optional: top with crushed or toasted walnuts

Instructions

  1. In a standard mason jar, or bowl, with a lid, combine oats and chia seeds. 
  2. Add oat milk and stir vigorously to prevent the chia seeds clumping too much. Stir until nicely combined.
  3. Stir in maple syrup.
  4. Add peanut butter and stir, but feel free to leave it not completely combined. That way you might get little surprise clumps of tasty peanut butter when you eat it in the morning. 
  5. Top with ½ banana (or any fruit of choice), chocolate chips, walnuts and any other desired toppings. 
  6. Place the lid on the jar or bowl and set in your fridge overnight. 
  7. In the morning, remove your overnight oats and enjoy!

Notes

Cost: CAD $0.76 ($0.92 with 2 tbsp walnuts).

You can play with the ratio of milk to oats depending on your preference. This ratio leaves all the oats moist but no extra milk in the jar. If you like drier oats, reduce the amount of milk a by ¼ cup. If you like some extra milk in there, add ¼ cup more. 

If you omit the chia seeds, reduce the amount of milk. The chia seeds absorb the liquid and swell. They thicken these oats beautifully but if you omit them you will likely have milkier oats. 

Feel free to omit the chocolate chips and replace with raisins or another topping of choice.

Halve the recipe for kids or those of you with smaller appetites in the morning.
