Can’t finish your coffee? Don’t dump it! Put it in a jar, refrigerate it, and the next morning… use it for this easy coffee oatmeal recipe!
Ingredients
- 1 cup quick oats (or rolled oats)
- 2 cups brewed coffee (use additional water or milk of choice if you have less than 2 cups)*
- Pinch of salt
- 1 banana, sliced
- 4 deglet noor dates, pitted and chopped
- 1/2 tbsp chia seeds
- 1/2 tbsp maple syrup
- 1 tbsp toasted walnuts, optional topping
- 1/2 tbsp chocolate chips, optional topping
*Ingredients you need that are not part of our pantry and freezer tips.
Instructions
- Combine oats and leftover brewed coffee in a small pot. If you have less than 2 cups of coffee reserved, top up the remaining liquid with water or plant milk of choice.
- Add a pinch of salt and bring the liquid to a boil.
- Reduce to a simmer, add sliced banana (reserving a few slices for garnish), chopped dates, and chia seeds. Stir to combine the add-ins with the oats and continue to cook for 3 minutes or until the oats are tender and most of the liquid has been absorbed.
- To serve, divide into bowls and top with reserved banana and any other toppings you desire. My favourites are toasted walnuts and a few dairy-free chocolate chips for fun.
Notes
I love using leftover coffee for this recipe. Whether your coffee is black, contains milk, or is flavoured – it will work. The flavour of your oats will change depending on the flavour of your coffee but that’s the fun part! Store leftover coffee in the fridge for 1-2 days until you are ready to make your oatmeal.
