Vegan Peppermint Hot Chocolate – Quick & Cozy

Description

This vegan peppermint hot chocolate is ready in minutes with ingredients you likely have in your pantry! Make a mug of cozy festive comfort!


Ingredients

  • 3 cups oat milk (or plant milk of choice, we like oat or soy)
  • 1 1/2 tbsp unsweetened cocoa powder
  • 3 tbsp dairy free chocolate chips
  • 1/4 tsp pure peppermint extract (or more to taste)
  • optional: sweetener of choice
  • optional: top with crushed candy cane and 5 minute whipped cream

Instructions

  1. Using a small pot, heat the milk over medium low heat stirring occasionally. 
  2. Once you see steam rising from the milk whisk in the cocoa powder until dissolved.
  3. Then whisk in the chocolate chips until melted. I like to rotate between a whisk and a wooden spoon to make sure the chocolate isn’t sticking to the bottom or sides of the pot.
  4. Whisk in the peppermint extract and give it a careful taste to see if you want to add a sweetener. Depending on how dark your cocoa powder and chocolate chips are you may want to add a sweetener to taste. I would add 1/2 – 1 tbsp maple syrup to start but feel free to use whichever sweetener you prefer.
  5. Pour into mugs and top with whipped cream and crushed candy cane if desired!

Notes

Approximate Cost: CAD $2.37 ($1.18/serving) using an artificial peppermint extract and CAD $2.46 ($1.23/serving) using a pure peppermint extract vs. at least $2 for a peppermint hot chocolate from a cafe.

The potency of the peppermint flavour will likely change based on the extract you have so feel free to start with ¼ tsp and add more if desired. 

Feel free to replace the milk with water if you prefer a less creamy hot chocolate.

If you want to try using fresh mint leaves you could add all the ingredients with the fresh mint leaves to your blender to break down the leaves. If your blender can handle hot liquids you could heat the milk and then blend everything together and it will froth the hot chocolate nicely. Otherwise, blend first and then transfer to a pot and warm it through.
