Oil-Free Chipotle Mayo (Vegan)

Description

5 ingredient oil-free chipotle mayo in 5 minutes or less. Soft tofu is the star of this simple, thick, and creamy mayo substitute!


Ingredients

Units Scale
  • 150 g soft tofu, drained (or silken tofu)
  • 1/2 tbsp diced chipotle pepper in adobo sauce (add more heat as desired)
  • 1 1/2 tbsp lime juice (about one small lime)
  • 1/4 tsp salt
  • 1/8 tsp garlic powder

Instructions

  1. Add all ingredients to a blender and blend until smoothly combined. 
  2. Taste and adjust the seasonings as desired. Add a bit more spice, lime juice, or salt to taste. 
  3. Transfer to an airtight container and refrigerate. Lasts well in the fridge for up to 4 days. You may notice a little bit of liquid separating from the “mayo” after it has been sitting in the fridge. Simply give the “mayo” a stir before serving.

Notes

Approximate Cost: $2.15 Canadian using a fresh lime ($1.53 using concentrated lime juice). A store bought version of real chipotle mayonnaise would cost me 85 cents per 100 ml and this recipe works out to around 70 cents per 100 ml.
