Description

A quick cilantro lime vinaigrette to brighten any dish! Just 5 ingredients, make it oil-free if you prefer, blend, & drizzle! Enjoy!


Ingredients

  • 1/2 cup packed cilantro (leaves and thin stems)*
  • 1/4 tsp lime zest (can use frozen, see our pantry & freezer tips!)
  • 22 1/2 tbsp lime juice
  • 1 tbsp apple cider vinegar
  • 1/4 cup olive oil (or use water for an oil-free version)
  • 1 clove garlic (peeled and the hard end trimmed)
  • salt & pepper to taste
  • optional: 1/4 of a red chilli pepper, sliced and deseeded or a dash of red pepper flakes

Instructions

  1. Add all the ingredients to your blender (I like using an immersion blender when blending smaller amounts). Blend until the ingredients are blitzed together and there are no large pieces of cilantro or garlic.
  2. Carefully taste and adjust to your liking adding more lime juice or apple cider vinegar for tanginess, olive oil or water to thin it out, and salt for more seasoning.
  3. Leftovers keep well in the fridge but the oil may firm up. Bring the vinaigrette back to room temperature and stir to mix the oil back in.
  4. Use as a salad dressing, over roasted vegetables, fresh bowls (like our Seaside “Fish” Taco Bowl), or even drizzle it on a pizza!

Notes

Approximate Cost: CAD $1.71 using a fresh lime. Roughly $1.20 if lime juice from concentrate and frozen zest are used.

We always try to have frozen citrus zest for recipes like this one! Anytime we have a lemon, lime, or orange and don’t need the zest we try to remember to zest it anyway and put the zest in a small container in our freezer. Having lemon and lime juice from concentrate in your fridge is another thrifty trick! Not as fresh but still works well!
