Description
Simple chia pudding recipe for a filling, high protein snack! Mix chia seeds with milk, sweeten as desired, & let thicken for 15 minutes!

- 1/2 cup chia seeds (85g)
- 1 1/2 cup oat milk (or 355ml plant milk of choice)
- 2 tbsp maple syrup (40g, or more to taste)
For individual 4 oz servings:
- 4 tbsp chia pudding
- 3 tbsp watermelon rind strawberry fruit sauce (or some jam of choice)
- 1 fresh strawberry, sliced
- 1 tsp toasted coconut flakes

Instructions
- Mix chia seeds into your milk of choice until fully incorporated. Try to stir the seeds into the milk as quickly as you can. Otherwise, the seeds can clump together quite easily. *Alternatively, you can even just add everything to a jar with a lid and shake it well!
- Stir in the maple syrup. Use more if desired or keep the pudding unsweetened (if your plant milk is sweetened you may find you don’t need extra sweetness). I tend to keep mine mildly sweetened since I will add jam or fresh fruit when I go to enjoy it.
- Allow it to sit and thicken in the fridge for 15 minutes. Give it another stir and enjoy right away or store in the fridge until you are ready to scoop some out for a snack!
- Feel free to add in any other flavourings. Try dissolving 2 – 2 1/2 tsp of cocoa or matcha powder in a couple tablespoons of warm water or milk before you add in the chia seeds (adding the powder directly to cold milk will often make it clump and not dissolve properly). Once your chia seeds are mixed in, feel free to add dried fruit, nuts, other seeds, nut butter, jam, chocolate chips… go wild and customize it to your liking!

Approximate cost: CAD $2.03 for 473 ml (2 cups) of pudding which we portion out into 4 servings! A single chia pudding cup purchased from our local grocery store or a cafe would cost us anywhere from $2.50 – $6.50.
