A Chocolate Beet Smoothie You Can’t Beat

Description

Chocolate Beet Smoothie? Oh yes! Sweet beet pairs perfectly with chocolate, peanut butter, and berries! Trust us, you can’t beat it! 


Ingredients

Units Scale
  • 1 medium sized cooked beet*
  • 2 pitted dates (soften in warm water if they are too hard, see notes)
  • 1 1/2 tbsp peanut butter
  • 1 tbsp maple syrup
  • 1 cup oat milk (the less milk the thicker and more frozen the consistency will be)
  • 1 tbsp cocoa powder
  • 1/4 tsp cinnamon
  • 2 frozen bananas
  • 2 cups frozen plums, cherries, or other berries

Instructions

  1. Add all the ingredients to your blender. (Start with less milk if you want to make this a smoothie bowl. Only add as much milk as needed to help it blend for a thicker consistency).
  2. Pulse to break down the frozen fruit, then blend. 
  3. For a smoothie bowl, top as desired! Chocolate shavings, fresh berries, coconut, nuts, chia seeds, and of course a drizzle of peanut butter.

Notes

*To make this a smoothie bowl, we use 1/4 – 1/2 cup milk. Just enough for the smoothie to blend but less milk keeps it as thick as possible. 

*You can use a raw beet but it will have a chunkier texture and be less sweet. Cooked beets blend down smoothly and their sweetness really comes out. See our post for how to roast beets.

*If you’re using deglet noor dates and they are a little hard just soften them in warm water for about 5 minutes. That will ensure they blend down and you don’t get chunks of dates (although tasty!) in your smoothie. Alternatively, you can omit the dates and still make a super tasty smoothie!
