Lemon Garlic Roasted Asparagus – A Simple Side

Description

This easy lemon garlic roasted asparagus recipe is ready in minutes and makes for a tasty and pretty side to serve up with your main!


Ingredients

Scale
  • 1 bunch asparagus (roughly 1.3 pounds)*
  • 1 tbsp olive oil
  • 1 lemon, sliced thin*
  • 2 cloves garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Snap the woody ends off the asparagus. *The asparagus will snap where it should naturally be cut. Add the ends to your veggie scrap bag for homemade veggie broth!
  3. Toss the spears in oil, garlic, salt, and pepper. Turning with your hands to coat all the spears evenly.
  4. Spread in a single layer on a parchment or silicone lined baking sheet.
  5. Lay thinly sliced lemon across the asparagus and roast for 8-10 minutes. At the 8 minute mark, check the asparagus and flip them over to brown the other side.

Notes

*Approximate Cost: CAD $7.75. The price of asparagus will be lower for us when it is in season in Ontario.

*Feel free to add any additional seasonings you desire. We often add a pinch of red chilli flakes for a hint of heat.

*If you don’t have fresh lemon but have concentrated lemon juice; drizzle ½ tbsp or more over your asparagus for the lemony flavour.

*Garnish with fresh dill if desired.
