Description

This BBQ pulled jackfruit sandwich is smothered in chipotle BBQ sauce and easy creamy coleslaw! Super thrifty at less than CAD $3 each!


Ingredients

Units Scale
  • 6 sandwich buns of choice*

Spicy Chipotle Pulled Jackfruit

  • 2 cans young green jackfruit, drained and shredded
  • 1/2 tbsp olive oil
  • 1/2 medium yellow onion, sliced
  • 2 cloves garlic, minced
  • 2 tsp smoked paprika
  • 1/4 tsp salt
  • 1 tsp liquid smoke
  • 1 cup water or veggie stock (homemade or store-bought)
  • 1 cup of our Easy Spicy Chipotle BBQ Sauce (or spicy BBQ sauce of your choice)

Summery Coleslaw

  • 397g coleslaw mix (7 cups of green and red cabbage with sliced carrots)*
  • 3/4 cup Quick And Easy Mayo (or try our 5 minute oil-free mayo!)
  • 2 tbsp apple cider vinegar
  • 3 tsp maple syrup
  • 3/4 tsp celery salt
  • 1/4 tsp black pepper

*Fresh ingredients you need that are not part of our pantry and freezer tips.


Instructions

*If making the Quick And Easy Mayo prepare in advance if possible and allow to chill in the fridge for 1 hour.

For the Pulled Jackfruit:

  1. Drain your jackfruit and shred it with your fingers or a fork. 
  2. Heat a non-stick skillet over medium heat. Saute the onion and garlic in olive oil or water and a pinch of salt for about 5 minutes until slightly caramelized.
  3. Add your shredded jackfruit and season with smoked paprika, salt, and liquid smoke. Cook for about 1 minute, stirring to combine. 
  4. Add 1 cup water or broth and ½ cup of your prepared BBQ sauce. Cover and allow to simmer on low for about 20 – 35 min until soft and all the flavours are combined. *Prepare your coleslaw now.
  5. Toss in the remaining ½ cup BBQ sauce before serving so it’s nice and saucy!

For the Coleslaw:

  1. Add the dressing ingredients to a bowl and stir to combine.
  2. Taste and adjust the seasonings to your liking adding more vinegar for bite, maple syrup for sweetness, and/or celery salt and pepper for seasoning.
  3. Stir the dressing into the coleslaw mix until evenly combined.
  4. Chill in the fridge until ready to serve.

To Assemble:

  1. If you have made extra mayo or chipotle BBQ sauce spread one or both on your bottom bun. Add a mound of pulled jackfruit and top with creamy coleslaw! Enjoy!

*Approximate Cost: CAD $17.53 ($2.92/sandwich). $3.29 for 6 buns, $9.28 for jackfruit, $4.96 for coleslaw (add an extra $1.54 if you make a whole batch of aquafaba mayo and use the extra on the buns bringing the cost to $19.07 total or $3.18/sandwich). 

*If we purchase a pulled jackfruit sandwich out we will typically pay about CAD $13 per sandwich. If we make our pulled jackfruit with the equivalent 4 lbs of pork shoulder it would add roughly $5 – $20 depending on whether the pork is purchased at a wholesale store or local grocery store. Our recipe saves us on average $10 per sandwich!
