The tastiest time saver ever! 5 minutes the night before and you have oh so creamy PB banana overnight oats ready for breakfast!

How many of you get stressed by rushed mornings? I know I sleep easier if I have everything I need ready for my morning. And I don't have children! I have memories of my mom rushing to get breakfast ready for my two siblings and I as kids. Hair and make-up half done, a hundred things on the go at once, parent multi-tasking super powers on full display!

Imagine... breakfast is made the night before (or a few nights before). You:

Open The Fridge...

Plop Them On The Table...
And Breakfast Is Served.

Easily Customizable

Ingredients for PB Banana Chip oats lay on a white tray. A banana, a spoon with peanut butter, a small glass bowl of oats and a small jar of chocolate chips with chia seeds scattered around.

Substitutions

Overnight oats are a blank canvas of opportunity! It is so easy to customize them for any food restrictions and preferences. Some ideas:

Sub Choc. Chips with Raisins
Banana with Strawberries
Oat Milk with Water or Milk of Choice
Chia Seeds with Ground Seeds To Sneak Past Kids (Flax, Sunflower)
Peanut Butter with Sunflower Butter, Jam, or Applesauce

Even Sub the Oats for Quinoa, Buckwheat or Granola!

Recipe Cost

This PB banana overnight oats recipe costs approximately CAD $0.76 per serving. If you add the optional walnuts, 2 tablespoon will bring the cost to CAD $0.92/serving.

So if you tend to buy oatmeal or yogurt or chia pudding from your local coffee shop when you're on the go... these overnight oats will certainly be saving you some money!

How Far Ahead To Make Them

An added bonus - overnight oats will last in the fridge for up to 5 days! That means you can take an extra 15-20 minutes and make a whole batch for your week ahead!

Which Oats Are Best

We've priced this recipe with Quick Cooking Oats since that is what we usually have on hand. You may find other recipes that advise against quick oats because the texture is "mushier". We find that if we put other crunchy toppings along with it (walnuts, dried fruit, etc.) we don't mind the porridge-like texture.

If you like your oats with a bit more firmness, then Rolled Oats would be best. And they will only be about CAD $0.06 more than quick oats.

I haven't tried overnight oats with Quick Cooking Steel Cut oats but if you really like more crunch try that out! They will run you about CAD $0.34 vs. the quick oats at $0.08.

Finally, I would advise against using true steel-cut oats as they may be a little too tough to get through.

Description

The best PB banana overnight oats! 5 minutes the night before and creamy peanut butter banana oatmeal will be ready for you in the morning!


Ingredients

Units Scale
  • ½ cup quick oats (sub rolled oats if desired)
  • 1 tbsp chia seeds
  • ¾ cup oat milk (or plant milk of choice)
  • ¾ tbsp maple syrup
  • 2 tbsp peanut butter
  • ½ banana, sliced*
  • 1 ½ tbsp mini vegan chocolate chips
  • optional: top with crushed or toasted walnuts

*Fresh ingredients you need that are not part of our pantry and freezer tips.


Instructions

  1. In a standard mason jar, or bowl, with a lid, combine oats and chia seeds. 
  2. Add oat milk and stir vigorously to prevent the chia seeds clumping too much. Stir until nicely combined.
  3. Stir in maple syrup.
  4. Add peanut butter and stir, but feel free to leave it not completely combined. That way you might get little surprise clumps of tasty peanut butter when you eat it in the morning. 
  5. Top with ½ banana (or any fruit of choice), chocolate chips, walnuts and any other desired toppings. 
  6. Place the lid on the jar or bowl and set in your fridge overnight. 
  7. In the morning, remove your overnight oats and enjoy!

Notes

Cost: CAD $0.76 ($0.92 with 2 tablespoon walnuts).

You can play with the ratio of milk to oats depending on your preference. This ratio leaves all the oats moist but no extra milk in the jar. If you like drier oats, reduce the amount of milk a by ¼ cup. If you like some extra milk in there, add ¼ cup more. 

If you omit the chia seeds, reduce the amount of milk. The chia seeds absorb the liquid and swell. They thicken these oats beautifully but if you omit them you will likely have milkier oats. 

Feel free to omit the chocolate chips and replace with raisins or another topping of choice.

Halve the recipe for kids or those of you with smaller appetites in the morning.

If gluten-free, ensure your oats are labeled gluten-free.

    Hi Kathryn! I love the cinnamon and brown sugar combo with my oatmeal, but do not love that added sugar. Any ideas for an overnight oatmeal with that same flavor profile?

      ooo great question! The first thing that comes to mind are dates. They have a sweet, caramel flavour similar to brown sugar but are also packed with fibre and all kinds of other goodness. You can chop them up and add them or even blend them into a caramel paste by just adding a bit of water. They can be harder on your stomach because of all the fibre so careful not to add too many to start! Coconut sugar and maple syrup both have that warm, caramel like flavour as well and are more natural sugars. Go wild with the cinnamon because that's full of good stuff and add in some diced apple maybe for a cinnamon apple overnight oats! I'll work on developing something. Let me know if this helps!
