Ingredients: Vegan Elotes (makes 8 cobs)⁠⁠
⁠⁠8 cobs of corn 
Ancho chili powder (for topping)
Garlic chives or cilantro, chopped (for topping)

Vegan “Mayo” 
200 g firm tofu
1 lime, zested & juiced (2 tablespoon of juice)
1 clove garlic
1 teaspoon apple cider vinegar
¼ teaspoon mustard powder
⅛ teaspoon salt
¼ cup unsweetened soy milk (less or more to thin as needed)

Vegan “Cotija Cheese”
¼ cup raw cashews, ground
¾ teaspoon nutritional yeast
⅛ - ¼ teaspoon salt 

⁠Method:
Prepare the corn by removing the husks and silk. Leave some stem intact to make the elotes easier to handle. 
Grill the corn until cooked and nicely charred. Alternatively, boil for 3-5 min to cook and then grill for a few min just before serving. 
While the corn cooks, prepare the “mayo” by adding all of the ingredients to a blender and blending until smooth. Refrigerate until ready to serve. 
Prepare the vegan “cotija cheese” by grinding the raw cashews in a small food processor or spice/nut grinder. Add nutritional yeast and salt and set aside.
To assemble, coat each ear of corn on all sides with 2 tablespoon of the “mayo”. Sprinkle the vegan “cotija cheese” over all sides of the corn. Then finish with sprinkling as much or as little of the ancho chili powder on top, garnishing with fresh chopped garlic chives or cilantro and reserved lime zest. 
Serve with extra lime and enjoy while warm!
