Quick Tips

Use pumpkin puree!

Canned pumpkin puree makes pumpkin filled recipes so quick and easy! Making sure to buy a can that isn't sweetened, where pumpkin is the only ingredient, will be the key to its versatility as an ingredient in your pantry.

Making Pumpkin Pie Energy Balls

  1. Coarsely grind walnuts, pecans, and oats in your food processor.
  2. Add in the pumpkin, dates, maple syrup, and spices.
  3. Process until everything is combined.
  4. Scoop.
  5. Roll.
  6. And Freeze!

*Feel free to store these in the fridge. I love to freeze them because they stay soft enough that you can grab them out of the freezer and pop them straight in your mouth without needing to wait for them to defrost!

If you don't have access to a food processor or blender not to worry!

  • Hand chop your nuts and dates.
  • Stir in the pumpkin, maple syrup, and spices.
  • Scoop, roll, and freeze!

The texture of your energy bites will be chunkier but they will be just as tasty!

Recipe Cost

If you've taken a look at our chocolatey No Bake Brownie Energy Balls, I compare the size of these energy bites to our classic Canadian timbits (doughnut hole sized miniature doughnuts).

This recipe will make 18-20 timbit sized energy bites and costs us: CAD $2.97. That's roughly $0.17 each!

Description

Bite sized pumpkin pie with no baking required! These easy pumpkin pie energy balls are ready in 15 min or less. A great grab & go snack!


Ingredients

Units Scale
  • ½ cup walnuts
  • ¼ cup pecans
  • 1 cup oats, quick or rolled
  • ½ cup pitted dates (10-12 dates, we use deglet noor, see notes)
  • 1 ½ tbsp maple syrup
  • ½ cup pumpkin puree
  • 1 ½ tsp pumpkin pie spice (or 1 ¼ tsp cinnamon, ¼ tsp nutmeg, pinch ginger)

*All the ingredients for this recipe are from our pantry and freezer tips!


Instructions

  1. If your dates are not very soft, soak them in hot water for 5 minutes.
  2. In your food processor, blitz walnuts, pecans, and oats together to break them down into a coarse mixture. Careful not to over-process them since you will add the rest of the ingredients and process again.
  3. Add dates, pumpkin puree, maple syrup, and spices. Pulse to combine the mixture until it starts to form a ball in the food processor. If it seems too wet you can add in more oats, walnuts, or pecans. If too dry, add more pumpkin or a bit of the water the dates soaked in.
  4. Using a small cookie scoop or a tablespoon, scoop the dough and roll it between your palms to form into a smooth ball. You can enjoy these right away, but I find they are best if stored in the freezer. They stay nice and soft so you can take one out whenever you’d like. There’s no need to wait for them to defrost! They will last 4 weeks in the freezer or 1-2 weeks in the fridge.

Cost Comparison: CAD $2.97 (roughly, $0.17/serving) vs. approximately $1 - $1.50 per energy bite purchased at a cafe.

*We use pitted deglet noor dates to keep the price of these bites a little lower. ½ cup of medjool dates will add roughly $0.50 to the recipe cost.

    I made them 3 times this season and they were delicious each time! Now I have a few in fhe freezer, just in case, for surprising guests and for a nice and healthy treat in the lunchboxes of our children.       You're welcome! And how you freeze them may depend on how many you make. Typically, I just arrange the energy balls in a single layer inside a freezer safe container and pop them straight into the freezer. Sometimes I will even pop a small batch into a freezer bag and lay it flat in my freezer so the energy balls don't get squished before they are fully frozen. If you are freezing a large batch, I would place all the energy balls on a lined sheet pan and put that in the freezer (uncovered) for 1-2 hours until the energy balls are frozen. Then you could remove the frozen energy balls from the sheet pan and transfer them to a freezer safe container or bag. I hope this helps! I love freezing them because they typically only take a few minutes to defrost. It's super convenient!
