The Tasty Secret To Mango Overnight Oats
We love stirring shredded coconut into these oats for a bit of extra flavour and texture!
But… if you have an extra minute and want to really take the flavour to the next level… toast a bit of extra coconut in a dry pan for a minute or so. Sprinkle that fragrant, toasty coconut on top for an extra comforting topping!
The added yogurt in this overnight oats recipe makes for super creamy and satisfying oats! We love the extra flavour from our 5 Min Easy Homemade Mango/Pineapple “Yogurt”! AND… since our “yogurt” happens to be made out of tofu (I know!) it adds a huge boost of protein that helps to keep you feeling fuller longer!
*You can absolutely use any yogurt you have for this recipe and feel free to toss in some different fruit, seeds, nuts etc. to suit whatever you have on hand!
Which Oats Are Best
We always use quick cooking oats for our overnight oats recipe.
Some people suggest against using quick oats because they are the thinnest variety and they get quite soft and mushy when left overnight. Once we mix in the fruit and crunchy toppings, we don’t mind the texture. BUT if you prefer firmer oats then…
Rolled oats would likely be your preference.
We haven’t tried this recipe with quick cooking steel cut oats. If you want really crunchy, nutty tasting oats you can give the quick cooking steel cut variety a try. They will likely need at least 8 hours to soften and I would combine the oats with the milk, wait a few hours, and give them a stir. I find that because they are heavier they can sink in the jar and some of the milk can sit in a layer on top.

A mango overnight oats recipe for a bright and easy morning! Add in our 5 minute homemade “yogurt” for an extra boost of filling protein!
Ingredients
- ½ cup quick or rolled oats
- ½ – ¾ cup oat milk
- ¾ tbsp maple syrup
- 1 tbsp shredded coconut (toast some extra for a flavourful topping!)
- ⅓ cup our mango/pineapple yogurt (or yogurt of choice)
- ½ – ¾ cup diced mango (see notes if using frozen fruit)*
- optional: 1 tablespoon chia seeds
- optional: hemp seeds for topping
*Fresh Ingredients you need that are not part of our pantry and freezer tips.
Instructions
- In a mason jar or bowl/container with a lid, mix the oats and optional chia seeds if using. Then add the milk and stir. Use ¾ cup milk if you are adding the optional chia seeds. You can decrease the amount of milk to just under ¾ cup if you are omitting the chia seeds (using ½ cup milk will give you firm oats with no extra milk if that is your preference).
- Stir in the maple syrup and shredded coconut.
- Spoon your yogurt of choice on top of the oats. *If you add the yogurt right away it may sink a bit into the oats. If you want a very distinct separation between the layers I would suggest letting the oats sit for a bit to soak up some of the milk and create a firmer base.
- Top with the diced mango and any other fruit you desire (kiwi makes a nice addition!). Hemp seeds and toasted coconut are lovely! To toast some extra coconut for the topping, add it to a hot pan and stir for about 1 minute until just golden and fragrant.
- Put the lid on the jar or bowl and place in the fridge overnight or for at least one hour. Can last for 2-3 days if needed.
Notes
Approximate cost: CAD $1.65 using our homemade mango/pineapple “yogurt” and closer to $1.95 using store-bought coconut yogurt.
If using frozen fruit make sure to decrease the amount of milk you’re adding. The fruit will release water as it defrosts and add to the liquid in the jar.
If you like really firm, crunchy oats you can try quick cooking steel cut oats. They will likely need at least 8 hours to soften and because of their weight I like to combine the oats and milk and wait a few hours. The oats can sink in the jar leaving a layer of milk sitting on top. Giving them a stir after a few hours will encourage the milk to be fully incorporated and then you can add your toppings. True steel cut oats (not the quick cooking variety) may not soften enough in overnight oats.
