How To Make Vegan Feta Cheese

Make vegan feta "cheese" in just 5 minutes... with tofu!

This simple recipe is super tasty, ready in a pinch, and creates a flavour and texture in the same wheelhouse as Greek feta.

If you're new to using tofu:

  • This recipe uses Extra Firm Tofu.
    • You want the "feta" to hold its shape in cubes after sitting in the dressing AND crumble easily with your fingers for a crumbled topping.
  • Silken, soft, or even medium tofu will not hold together enough for this recipe.
    • Their higher water content will make them break down in the dressing instead of holding in cubes.
  • Some brands of extra firm tofu are pre-pressed and you can skip pressing the water out.
    • If your extra firm tofu seems like it is holding more water, use a tofu press or wrap the tofu in a clean towel and place a heavy skillet on top for about 10 minutes. This will drain some of the water and allow the tofu to soak up more of the flavourful dressing!

Ingredients For Tofu "Feta"

These tasty ingredients make up this quick and easy feta marinade:

  • Apple cider vinegar for its sweet, vinegary, tartness
  • Miso paste to add salty flavour and the depth that comes with this fermented paste
  • Sea salt for the extra saltiness you expect from a feta
  • Parsley or any other fresh herb you desire for some extra freshness
  • And nutritional yeast is an optional flavour booster for a deeper "cheesy" flavour.

  1. Mix all the dressing ingredients together in a bowl,
  2. Pour the dressing over your tofu feta cubes,
  3. And ideally, refrigerate for at least 2 hours before serving for a fuller flavour.

Recipe Cost

This recipe costs us approximately: $4.50 Canadian for 350g using 2 tablespoon of parsley and 1 tablespoon nutritional yeast. Without the optional ingredients our cost would be just under $4.

So, how does our recipe compare to store-bought feta cheese?

350g of feta cheese purchased from our wholesale store would cost us approximately, $3.79. Purchased from our local grocery store the price can range from $6.99 to over $13.

So, this vegan tofu feta "cheese" option ends up being a pretty thrifty option for us!

Description

Whip up this quick vegan tofu "feta" anytime you're craving a crumbly, salty, fresh topping for your salads, pizzas, and pastas!

Ingredients

Units Scale
  • 350g extra firm tofu
  • ¾ cup apple cider vinegar
  • ½ cup water
  • 2 tbsp miso paste
  • 1 tsp sea salt
  • optional: 2 tablespoon parsley or oregano*
  • optional: 1 tablespoon nutritional yeast for "cheesy" depth

*Fresh ingredients you need that are not part of our pantry and freezer tips.

Instructions

  1. If your tofu brand is not pre-pressed, press out the excess water so that it will soak up more of the dressing. Use a tofu press or wrap the tofu in a clean dish towel and place something heavy on top for about 10 minutes.
  2. Slice your tofu into cubes.
  3. Mix the dressing ingredients in a bowl or jar. Taste and adjust to your liking. More vinegar for extra tartness, extra salt for more of that salty feta flavour, or more nutritional yeast for "cheesiness".
  4. Pour the dressing over the tofu (or drop the tofu cubes into the jar) and refrigerate in an air-tight container until ready to use. Ideally, refrigerate for at least 2 hours before enjoying. This allows time for the flavours to penetrate the tofu.
  5. Keeps well for 3-4 days and easily crumbles! Try it over our Watermelon Salad or Pesto Pizza!

Notes

*Cost Comparison: CAD $4.30 for 350g (with parsley and 1 tablespoon nutritional yeast) or $3.93 without the optional ingredients vs. wholesale feta cheese costing $3.79 and local grocery store feta ranging from $6.99-$13.11.

This is so outstandingly delicious! I tried with fresh oregano in one jar and dried parsley in another. Both were wonderful!
