This quick lemon chia oatmeal finds the perfect balance between fresh lemony taste and warm maple syrup sweetness. Start your morning with this cozy immune boosting breakfast! These oats have a:

Fresh Lemon Juice and Zest
Superfood, easy to digest, Chia Seeds
And our beloved Canadian Maple Syrup

*If you don't have a fresh lemon you can sub concentrated lemon juice.
*And for the zest... any time you have a fresh lemon and don't need the zest... zest it anyway and freeze it in a small container. That way you always have a bit on hand for recipes like this one!
*Feel free to sub the chia seeds for poppy seeds or even ground pumpkin or flax seeds!

We find the best price for chia seeds to be our wholesale store but they often go on sale at our bulk store and can be found in the "natural foods" section of our local grocery store.

How To Make Quick Lemon Chia Oatmeal

To make this quick lemon chia oatmeal we use quick cooking oats.

  1. Combine the oats and the water in a small saucepan over medium heat,
  2. Bring to a boil,
  3. Lower the heat to a simmer,
  4. Add the other ingredients and,
  5. Cook, stirring occasionally, for 3 minutes until tender.

And you're done! You have a super tasty bowl of oats in less than 10 minutes!

*See the notes at the bottom of the recipe card if you're using quick cooking steel cut oats.
*Make these overnight oats by combining ½ cup rolled oats, ¾ cup plant milk, and the remaining ingredients in a jar with a lid. Add more milk for thinner oats. Top with fresh berries to add some more fruity freshness and refrigerate overnight.

Description

This quick lemon chia oatmeal has just enough fresh lemony taste & warm maple syrup sweetness. Start your morning with a cozy immune booster!


Ingredients

Units Scale
  • 1 cup oats, quick cooking (can use rolled)
  • 2 cups water
  • pinch of salt
  • 1 tbsp lemon zest (from 1 lemon, reserve some for topping, can use frozen)
  • 1 ½ tbsp lemon juice
  • 1 tbsp chia seeds (plus more for topping)
  • ½ tbsp maple syrup (or more to taste)
  • optional: ⅛ cup plant milk of choice for creamier oats
  • optional toppings: candied ginger, more chia seeds, toasted pecans

*All the ingredients for this recipe are from our pantry and freezer tips!


Instructions

  1. Combine raw oats and water in a small saucepan. Add a pinch of salt to help bring out the flavour of the oats.
  2. Bring the oats to a boil, then lower the heat to a simmer.
  3. Add the lemon zest (reserving some for topping), lemon juice, chia seeds, and maple syrup.
  4. Stir and cook until oats are tender, about 3 minutes. For creamier oats, add a touch of oat milk a minute or so before they are done.
  5. To serve: spoon into bowl, sprinkle with extra chia seeds and lemon zest. Top with candied ginger, toasted pecans, and another drizzle of maple syrup! Enjoy!

Notes

*Approximate Cost: $1.37 CAD ($0.67/serving) vs. $2.50 or more per serving for oatmeal purchased from a cafe. 

*For gluten-free, ensure your oats are a gluten-free brand.

*Feel free to adjust the amount of lemon and maple syrup to your liking. Boost up the cold fighting capability of these oats by adding a dash of ginger, turmeric, and/or cinnamon.

*If using quick cooking steel-cut oats: bring 1 ½ cup water to a boil, add ¾ cup oats, lower the heat, stir, and cook for about 7 minutes.  Add ¼ cup plant milk of choice with about 3 minutes cooking time left for creamier tasting oats.

    Really comforting when I'm under the weather. Usually add lemon to my tea but I like this idea to get it into oatmeal. Thank you for the idea hun🙏🏻
