The Four Simple Ingredients
- 1 bunch of Asparagus (about 1.3 lbs)
- A Lemon
- 2 cloves of Garlic
- A drizzle of Olive Oil
And a sprinkle of salt and pepper tie all the flavours together.
*You can omit the oil if you prefer. The asparagus won’t get as browned and may take a bit longer to cook but will still be tasty. Squeeze lemon juice over the spears instead of just placing the lemon slices, that should help the asparagus soak up a bit more flavour.
How To Trim The Woody Ends
Asparagus spears have tough ends that are paler in colour than the vibrant green tops. These ends are usually tougher and less palatable so they are trimmed before cooking. Trim these tough ends two ways:
The Bend and Snap Method:
- Grip the asparagus on either end of the spear, bend it, and the spear will snap in half. Often the spear will snap where it naturally separates from the tough end and the fresh top.
- Make sure to throw the ends in your veggie scrap bag for your homemade veggie broth!
Sometimes the bend and snap method can result in tossing too much of the asparagus. So…
Slice The Pale Ends
- You can slice the pale ends with a knife, keeping the bright green part of the spear and adding the pale ends to your veggie broth bag.
- You may find a few of the spears taste a little tougher near the bottom if you sliced a little low... so for company, I’d suggest the bend and snap method to ensure your asparagus is as tasty as possible!
How To Roast Asparagus
- Preheat your oven to 400 degrees F.
- Trim your asparagus.
- Drizzle the spears with olive oil, salt, and pepper (turning with your hands to coat all the spears evenly).
- Lay the spears in a single layer on a parchment or silicone lined baking tray.
- Top with thin slices of lemon.
- Roast for 8-10 minutes (check at 8 minutes and flip the spears over to brown on the other side for the remaining time).
*If you have some fresh herbs, like dill, garnish just before serving. And enjoy!

Ingredients
- 1 bunch asparagus (roughly 1.3 pounds)*
- 1 tbsp olive oil
- 1 lemon, sliced thin*
- 2 cloves garlic, minced
- ¼ tsp salt
- ¼ tsp pepper

Instructions
- Preheat the oven to 400 degrees F.
- Snap the woody ends off the asparagus. *The asparagus will snap where it should naturally be cut. Add the ends to your veggie scrap bag for homemade veggie broth!
- Toss the spears in oil, garlic, salt, and pepper. Turning with your hands to coat all the spears evenly.
- Spread in a single layer on a parchment or silicone lined baking sheet.
- Lay thinly sliced lemon across the asparagus and roast for 8-10 minutes. At the 8 minute mark, check the asparagus and flip them over to brown the other side.
Notes

*Feel free to add any additional seasonings you desire. We often add a pinch of red chilli flakes for a hint of heat.
*If you don’t have fresh lemon but have concentrated lemon juice; drizzle ½ tablespoon or more over your asparagus for the lemony flavour.
