Carrot Cake Oatmeal You Need In Your Life

Leftover shredded carrot?... Carrot Cake Oatmeal here we come! I mean, carrot muffins are a breakfast staple right? Carrot oatmeal totally deserves the same standing.

We can't get over how tasty this oatmeal is. It's:

This recipe uses quick cooking steel-cut oats but you can easily sub rolled oats and adjust the cooking time making this recipe even quicker to make!

Quick Cooking Steel-Cut Oats

Wondering about the differences between cuts of oats? Simply Oatmeal has a great guide. True steel-cut oats can take closer to 20-25 minutes to cook but look for the quick cooking version and you'll find they are:

Ready in 7-10 minutes
Hearty
Chewier
And A Little More Robust

Than your creamy quick oats.

But at the end of the day there is little difference in the nutritional values between the cuts of oats. So, it mostly comes down to your flavour and cost preferences.

Recipe Cost

Two servings of our carrot cake oatmeal costs $1.24 CAD ($0.62/serving) vs roughly $2.50 or more if you tend to buy oatmeal from your coffee shop.

Using Quick Oats

You sure can! Use 1 cup quick oats and 2 cups water. Adjust your cooking time and make sure your carrots are tender, adding more liquid if needed.

Using quick oats will bring the recipe cost down to $0.80 CAD ($0.40/serving)!

Description

This is like warm, comforting, carrot cake for breakfast. So tasty you'll be making it over and over!


Ingredients

Units Scale
  • 1 ½ cup water
  • ¾ cup quick cooking steel cut oats (107 g, or oat of choice but see notes)
  • Pinch of salt
  • ½ cup shredded carrot (about ½ medium carrot, can use frozen)*
  • ¼ cup raisins
  • ¼ tsp vanilla extract
  • ¼ tsp cinnamon
  • ¼ cup oat milk or plant milk of choice (optional, for extra creaminess)
  • sprinkle of cardamom (optional)
  • ½ tsp maple syrup if you like it sweeter (optional)
  • optional: warm cinnamon apples, toasted walnuts

*Fresh ingredients you need that are not part of our pantry and freezer tips.


Instructions

  1. Add water to a small saucepan and bring to a boil. If shredding your carrot from whole, shred now. 
  2. Once water has boiled, add oats and pinch of salt. Stir and lower heat to a simmer.
  3. Cook oats for 5 minutes, then add shredded carrot, raisins, cinnamon, vanilla, and cardamom if using.
  4. Cook for another 5 minutes to meld all the flavours and soften the carrots. Add oat milk for a bit of extra creaminess (the extra liquid may require you to cook the oats for a couple extra minutes). 
  5. To serve, spoon into bowls and dress it up how you'd like. Our warmed skillet apples with cinnamon and toasted walnuts are perfect!

Notes

*Cost: $1.24 CAD ($0.62 per serving) vs. $2.50 or more per serving if we purchase oatmeal from a cafe.

*If you substitute quick cooking oats. Combine 1 cup oats with 2 cups water. The recipe cost goes down to $0.80 CAD ($0.40/serving)!

*If gluten-free, ensure your oats are labeled gluten-free.
