Chocolate PB Dates - Better Than A Candy Bar

Oh. My. Word. Chocolate dipped peanut butter filled dates!! I cannot express how much I want you to make these right now! They are so much fun. So incredibly decadent. So easy. And I can absolutely honestly say I would take these over a candy bar without a moment of hesitation! These chocolate peanut butter dates are:

Peanut buttery
Chocolatey
Gooey Caramely
Decadent. Fun. Smile Inducing. Wonderfulness.
All Wrapped Up In A Quick And Easy, No Bake Treat!

Ingredients

These Chocolate Peanut Butter Dates are made with 5 simple ingredients:

Tasty Medjool Dates
Peanut Butter
Crushed Almonds
Dairy Free Chocolate Chips
And a touch of Coconut Oil (or other neutral oil) to make coating in chocolate a breeze.

Make sure you are using Medjool dates for this recipe. You could use the smaller, pitted, Deglet Noor dates BUT in order to get the softest, most caramel flavoured, treat... medjool dates are the way to go!

Make Chocolate PB Dates

  • Start by slicing into the dates and pulling out the small pits.
  • Fill the dates with peanut butter.
  • Sprinkle crushed almonds (or lay a whole almond) inside the dates.
  • Freeze your peanut butter filled dates for 15 minutes and prep your chocolate.

  • Add coconut oil to chocolate chips and melt in the microwave (or on the stovetop).
  • Remove your frozen dates from the freezer and dip them in the chocolate.
  • Allow the excess chocolate to drip off.
  • Place the chocolate covered dates on parchment paper or a wire rack over a cutting board to catch the drips (I like using a wire rack so the bottoms don't get too smooshed but carefully remove them when fully set).
  • While the chocolate is still wet, sprinkle the dates with toppings of your choice!

  • Carefully transfer the dates to the fridge and allow to set for at least 30 minutes.
  • If you are serving these for an event or gifting them, the chocolate will hold up best if you can make them a day in advance and allow the chocolate to fully set and harden in the fridge.
  • Store in an airtight container in the refrigerator. Mine have never lasted more than 3 days without being all eaten up! But I expect these will hold up very well for at least a week and likely longer.

This recipe costs us approximately: CAD $5.77 for 12 chocolate covered dates!

Although medjool dates and dairy free chocolate chips are pricier items in our pantry... these bundles of tasty happiness are still more cost effective than buying treats like Creme Eggs or Kinder Eggs.

We love to make these chocolate peanut butter dates around Easter when the Creme Egg fever is at its height!

Our absolutely favourite daily treat is stuffing a date with peanut butter and an almond and skipping the chocolate coating. Whenever we are craving a sweet treat throughout the day... we slice a date, remove the pit, scoop some PB inside, stuff it with an almond, and it's better than a brownie!!

Description

These chocolate peanut butter dates are the most deliciously decadent dessert! Stuffed with PB, dipped in chocolate, easy, & ready in a flash!


Ingredients

Units Scale
  • 12 medjool dates, pitted
  • 3-4 tablespoons peanut butter
  • ⅛ cup crushed almonds
  • 1 cup chocolate chips, dairy-free
  • 2 tsp coconut oil (or other neutral oil)

*All the ingredients for this recipe are from our pantry and freezer tips!


Instructions

  1. Slice into each date and pull out the pit. 
  2. Fill the dates with a scoop of peanut butter and then sprinkle crushed almonds inside. 
  3. Squeeze the dates to close them up as much as possible. (It’s ok if you have some bursting through the seam just make sure that the dates freeze enough before you dunk them in the warm chocolate, otherwise your peanut butter will run).
  4. Place the peanut butter filled dates in the freezer for about 15 minutes to freeze the peanut butter and make them easier to coat in chocolate.
  5. Meanwhile, add coconut oil or another neutral oil to your chocolate (you can omit the oil but it helps to make the chocolate runnier. This will make a thinner and smoother coating of chocolate).
  6. Melt your chocolate in the microwave (start with about 20-30 seconds, then stir the chocolate and heat in increments of about 12 seconds to avoid burning).  Alternatively, melt the chocolate over very low heat in a saucepan or use a double boiler method. 
  7. Remove the dates from the freezer and dip, one at a time in the melted chocolate. Turn them over until fully coated and then lift them up and allow the excess chocolate to run off.
  8. Place the chocolate covered dates on a silicone mat, parchment paper, or a wire rack over a cutting board to catch the drips (If you use a wire rack you do need to take extra care to make sure the dates are fully set before removing them. If in a bit more of a rush, using parchment paper or a silicone mat will make the dates easier to remove after 30 minutes or so).
  9. While the chocolate is still wet, sprinkle the tops with more crushed almonds, colourful sprinkles, coconut flakes, or any other desired toppings!
  10. Carefully transfer to the refrigerator and allow the chocolate to set for at least 30 minutes to 1 hour (the longer the better... overnight being the best option!).
  11. Once fully set, you can store in an airtight container. I like to keep them in the fridge and I would think they will keep very well for at least a week but they've never lasted that long for me!

Notes

*Approximate Cost: CAD $5.77 for 12 pieces vs. $1-$1.50 for one Creme Egg.

*If taking these somewhere or gifting them, they hold up really well if you can leave them in the fridge overnight to fully set and chill. I prefer to chill these and store them in the fridge because I find the chocolate doesn't get dewy when exposed to room temperature... like it does if they have been stored in the freezer. But feel free to store them in the freezer if you prefer.

*For a nut free version, stuff the dates with tahini or another seed butter!

    These were incredible. Ate first one too soon (couldn't wait) it was gooey and delicious and messy. .. After night in fridge, wow even better. Held shape. I won't go back to my favourite "peanut butter cup

    Kathryn you are right! these chocolate/peanut butter dates are better than a candy bar. We paced ourselves and had one every night with our coffee last week. Buying more dates tomorrow 😉
