Can I Use Any Leftover Coffee
Yes! Use your black coffee or your leftover latte. The flavour of your oatmeal will change depending on the flavour of your coffee but that’s the fun of this recipe.
Change up the add-ins to compliment your coffee flavour!
- Caramel flavoured? Try dates, maple syrup, and pecans.
- Leftover pumpkin spice latte? Add in more cinnamon, spices, and even stir in some pumpkin puree if you have it!
- Fruity coffee blend? Add in some berries and chocolate.

Using Less Than Two Cups Of Coffee
Use what you have! I often reserve less than a cup of coffee and use it in my oats the next morning.
If you have less than two cups of brewed coffee, top up the remaining liquid needed with water or your favourite plant milk for extra creaminess.

Easy Coffee Oatmeal (With Your Leftover Joe)

Can’t finish your coffee? Don’t dump it! Put it in a jar, refrigerate it, and the next morning… use it for this easy coffee oatmeal recipe!
Ingredients
- 1 cup quick oats (or rolled oats)
- 2 cups brewed coffee (use additional water or milk of choice if you have less than 2 cups)*
- Pinch of salt
- 1 banana, sliced
- 4 deglet noor dates, pitted and chopped
- ½ tbsp chia seeds
- ½ tbsp maple syrup
- 1 tbsp toasted walnuts, optional topping
- ½ tbsp chocolate chips, optional topping
*Ingredients you need that are not part of our pantry and freezer tips.
Instructions
- Combine oats and leftover brewed coffee in a small pot. If you have less than 2 cups of coffee reserved, top up the remaining liquid with water or plant milk of choice.
- Add a pinch of salt and bring the liquid to a boil.
- Reduce to a simmer, add sliced banana (reserving a few slices for garnish), chopped dates, and chia seeds. Stir to combine the add-ins with the oats and continue to cook for 3 minutes or until the oats are tender and most of the liquid has been absorbed.
- To serve, divide into bowls and top with reserved banana and any other toppings you desire. My favourites are toasted walnuts and a few dairy-free chocolate chips for fun.
Notes
I love using leftover coffee for this recipe. Whether your coffee is black, contains milk, or is flavoured – it will work. The flavour of your oats will change depending on the flavour of your coffee but that’s the fun part! Store leftover coffee in the fridge for 1-2 days until you are ready to make your oatmeal.
