Lemon Garlic Roasted Asparagus - A Simple Side

A quick and easy side, this lemon garlic roasted asparagus will shine next to your main dish. It's:

So Simple To Prepare
8-10 Minutes In The Oven
Retains The Crispness Of The Asparagus
With A Hint Of Lemony Freshness, Garlic, Salt & Pepper!

The Four Simple Ingredients

  1. 1 bunch of Asparagus (about 1.3 lbs)
  2. A Lemon
  3. 2 cloves of Garlic
  4. A drizzle of Olive Oil

And a sprinkle of salt and pepper tie all the flavours together.

*You can omit the oil if you prefer. The asparagus won't get as browned and may take a bit longer to cook but will still be tasty. Squeeze lemon juice over the spears instead of just placing the lemon slices, that should help the asparagus soak up a bit more flavour.

How To Trim The Woody Ends

Asparagus spears have tough ends that are paler in colour than the vibrant green tops. These ends are usually tougher and less palatable so they are trimmed before cooking. Trim these tough ends two ways:

The Bend and Snap Method:

  • Grip the asparagus on either end of the spear, bend it, and the spear will snap in half. Often the spear will snap where it naturally separates from the tough end and the fresh top.
    • Make sure to throw the ends in your veggie scrap bag for your homemade veggie broth!

Sometimes the bend and snap method can result in tossing too much of the asparagus. So...

Slice The Pale Ends

  • You can slice the pale ends with a knife, keeping the bright green part of the spear and adding the pale ends to your veggie broth bag.
    • You may find a few of the spears taste a little tougher near the bottom if you sliced a little low... so for company, I'd suggest the bend and snap method to ensure your asparagus is as tasty as possible!

How To Roast Asparagus

  1. Preheat your oven to 400 degrees F.
  2. Trim your asparagus.
  3. Drizzle the spears with olive oil, salt, and pepper (turning with your hands to coat all the spears evenly).
  4. Lay the spears in a single layer on a parchment or silicone lined baking tray.
  5. Top with thin slices of lemon.
  6. Roast for 8-10 minutes (check at 8 minutes and flip the spears over to brown on the other side for the remaining time).

*If you have some fresh herbs, like dill, garnish just before serving. And enjoy!

Recipe Cost For Lemon Garlic Roasted Asparagus

The price for asparagus in Ontario can fluctuate quite a bit depending on when it is in season for us BUT on average...

This lemon roasted garlic asparagus costs us approximately: CAD $7.75 and serves 3-4 people.

*That price is assuming the asparagus costs us CAD $6.49 for one bunch and the remaining ingredients fill out the rest of the cost. When asparagus is in season we can often buy a bunch for closer to $5.

Description

This easy lemon garlic roasted asparagus recipe is ready in minutes and makes for a tasty and pretty side to serve up with your main!


Ingredients

Scale
  • 1 bunch asparagus (roughly 1.3 pounds)*
  • 1 tbsp olive oil
  • 1 lemon, sliced thin*
  • 2 cloves garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper

*Fresh ingredients you need that are not part of our pantry and freezer tips.


Instructions

  1. Preheat the oven to 400 degrees F.
  2. Snap the woody ends off the asparagus. *The asparagus will snap where it should naturally be cut. Add the ends to your veggie scrap bag for homemade veggie broth!
  3. Toss the spears in oil, garlic, salt, and pepper. Turning with your hands to coat all the spears evenly.
  4. Spread in a single layer on a parchment or silicone lined baking sheet.
  5. Lay thinly sliced lemon across the asparagus and roast for 8-10 minutes. At the 8 minute mark, check the asparagus and flip them over to brown the other side.

Notes

*Approximate Cost: CAD $7.75. The price of asparagus will be lower for us when it is in season in Ontario.

*Feel free to add any additional seasonings you desire. We often add a pinch of red chilli flakes for a hint of heat.

*If you don’t have fresh lemon but have concentrated lemon juice; drizzle ½ tablespoon or more over your asparagus for the lemony flavour.

*Garnish with fresh dill if desired.
