Ingredients For Vegan Mushroom Fajitas
Our Spicy & Sweet Sesame Strips are marinated in:
- Tamari (or soy sauce)
- Fresh Ginger
- Garlic
- Tahini
- Maple Syrup
- A bit of Sesame Oil
- And a Hot Red Chilli Pepper!
Mix all the marinade ingredients in a bowl and pour it over your sliced portobello mushrooms. Marinate for 10 minutes while you grill up the corn, onion, and peppers!
The Charred Veggies
10 minutes for some Skillet Charred Corn is 10 minutes well spent! Simply letting the corn get slightly burnt in a hot skillet boosts its sweet flavour and infuses it with a toasty BBQ feel!
Once the corn is nicely charred, add in the red onion and peppers and cook for another 10 minutes or so while you grill up your mushroom strips!
*You can either remove the corn from the skillet once it’s charred, keep it warm, and serve it separately OR… add the onions and peppers into the same skillet and combine everything together.
The Dressing
Our Miso Maple Tahini Dressing takes these vegan sesame mushroom fajitas to a whole new level!
- Tahini
- Sweet Maple Syrup
- Salty, Savoury Miso Paste
- Lemon Juice
- And a touch of Toasted Sesame Oil (omit to keep the dressing oil-free!)
Boosts the sweet, savoury flavours and makes the charred BBQ taste shine through!
Building Vegan Sesame Mushroom Fajitas
- Warm up your tortillas.
- Add a heap of grilled peppers and onions.
- Sprinkle on the charred corn.
- And top with about 4 spicy & sweet sesame strips.
- Garnish with cilantro sprigs.
- And drizzle the dressing!
Recipe Cost
This recipe makes at least 6 fajitas, serving at least 2 people.
All together, this recipe costs us: CAD $20.48 ($3.41 per fajita). Considering these are pretty super duper fancy flavour bomb fajitas… we’re alright with that!
And… using our tasty spicy & sweet sesame strips offers big savings compared to using steak!
Our sesame strips cost us roughly: CAD $7.10. Using 1 pound of flank steak would add roughly $5 – $7. Most recipes call for 1 ½ pound of steak which would make the savings closer to $10 – $13.
The miso maple tahini dressing costs us $1.03 and the remaining ingredients cost around CAD $12.35 (using green bell peppers would bring the cost down slightly!)
And… if we were to go out for fajitas at a restaurant, we would likely pay $15 – $20 per person. That means, these loaded fajitas offer savings all around!

Description
Make it a fajita Friday, or Monday, or Wednesday! These vegan sesame mushroom fajitas pack huge flavour with a miso maple tahini dressing!
Ingredients
For The Spicy & Sweet Sesame Strips:
- 4 portobello mushroom caps*
- ½ tbsp sesame oil
- 3 tbsp maple syrup
- ¼ cup tamari (or soy sauce if not gluten free)
- 1 tbsp tahini
- 1 tbsp fresh ginger
- 1 tsp fresh minced garlic
- ½ – 1 red chilli pepper, seeds removed (sub ¼ tsp chilli flakes, ⅛ tsp cayenne pepper, or adjust to desired heat)
All The Rest:
- 2 cups corn kernels
- 1 red onion, sliced*
- 3 assorted bell peppers, sliced*
- salt and pepper to taste
- cilantro to garnish*
- 6 tortilla shells*
- Miso Maple Tahini Dressing
*Fresh ingredients you need that are not part of our pantry and freezer tips.
Instructions
*The Miso Maple Tahini Dressing can be prepared in 5 minutes! Either prepare it in advance and store it in the fridge until ready to serve or multi-task and whisk it up quickly while your veggies cook!
Prepare The Mushrooms:
- Brush any dirt off the mushrooms (don’t use water or your mushrooms will get soggy with water and not tasty marinade!), twist out the stem, and slice into ½” thick slices.
- Lay the mushrooms in a shallow dish and combine the remaining ingredients for the marinade.
- Pour the marinade over the mushrooms, turning the slices to coat evenly, and marinate for 10 minutes.
Char The Veggies:
- While the mushrooms marinate, heat a large non-stick skillet over medium heat. Add a drizzle of olive oil (or water/broth) if you’re not using a cast iron skillet.
- Add the corn and allow the corn to char, stirring occasionally, while you slice the bell peppers and red onion.
- Once the corn is nicely charred, about 10 minutes, add in the onion and soften for 1 minute or so. Then add in the bell peppers and season with salt and pepper. Stir occasionally while you grill the mushrooms.
- Heat a grill pan on a separate burner. Once hot enough, add as many slices of mushrooms as you can fit comfortably on the grill. Be careful, the marinade may splash if the grill is too hot!
- Grill the mushrooms on each side for 3-5 minutes until nicely charred and softened.
Build The Fajitas!
- Warm your tortilla shells if desired. Spoon a mound of onion, peppers, and corn in the centre of the tortilla shells. Add about 4 mushroom strips on top. And garnish with cilantro and a drizzle of the miso maple tahini dressing. Enjoy!
