Crispy and cubed roasted sweet potato has to be one of my favourite easy side dishes. Breakfast, lunch, or dinner this tasty root vegetable steels the show.

How To Make Roasted Sweet Potato
You can roast sweet potato in so many ways but I love to cube it! The smaller pieces mean the sweet potato cooks faster and you will be that much closer to enjoying a fantastic meal.
- Preheat your oven to 425 degrees F (the high heat helps these to crisp)
- Wash and thoroughly dry your sweet potato (making sure they are fully dry also contributes to the crispiness)
- Slice the sweet potato into cubes.
- Toss in seasonings, starch, and then oil.
- Spread on a baking tray
- And bake for 25 – 30 minutes.
Seasoning Roasted Sweet Potato
Another reason why roasted potatoes or sweet potatoes are such a popular side dish is that you can season them however you like to compliment your main. Some ideas:
- Dried ground spices and herbs are your friends.
- Fresh garlic and herbs will be lovely but best added only in the last few minutes of cooking. This way you won’t end up with burnt garlic and herbs.
- Try dried Italian herbs (oregano, basil, thyme, rosemary).
- Curry powders, turmeric, and ginger will compliment the sweet potato nicely.
- Make them sweet with cinnamon and maple syrup.
- OR my typical go to… a little bit of spice (I love smoked paprika or chilli powder).
Using Starch
I don’t always add starch to my cubed roasted sweet potatoes but it does help them get a little crispier. Sometimes it’s quicker to just drizzle a bit of oil and some seasonings and pop them in the oven. BUT…
- If you have an extra few seconds to spare then tossing the potato in your seasonings,
- Then some arrowroot starch or cornstarch,
- And then olive oil (until no more starch is visible).
Will result in some crispier potatoes with a bit more texture on the skins.

Description
Perfectly crispy on the outside & melty soft on the inside! This easy cubed roasted sweet potato recipe is ready in 40 minutes!
Ingredients
- 4 cups diced sweet potato (2-3 depending on size, roughly 1 lb)*
- ¼ tsp sea salt
- Pinch of black pepper
- 1–2 teaspoon chilli powder (or seasoning of choice)
- 1 tbsp arrowroot starch (or cornstarch, optional for extra crispiness)
- 1 tbsp olive oil
*Fresh Ingredients you need that are not part of our pantry and freezer tips.
Instructions
- Preheat your oven to 425 degrees F and prepare a baking sheet with parchment paper or a silicone mat.
- Wash and thoroughly dry your sweet potatoes (I like to keep the skin on. Less work & extra crispy!)
- Slice the sweet potatoes into cubes and toss with salt, pepper, and chilli powder.
- Then toss the cubed sweet potato in the starch, if using, until all the pieces are coated.
- Next, toss in olive oil until no more starch is visible.
- Arrange in a single layer on your baking tray and roast for 25 – 30 minutes, turning the pieces over and rotating the pan halfway through.
- Best enjoyed immediately but to reheat, carefully crisp them up again under the broiler or reheat for 10 minutes or so at 425 F.
- Enjoy them as part of our Sweet Potato Black Bean Tacos and make sure you roast a few extra so you have leftovers for a Scramble & Spuds Breakfast Bowl!
