
This oil-free chipotle mayo is inspired by my tofu based 5 minute oil-free mayo recipe! Once I discovered how great of a substitute soft tofu can be for mayonnaise... I have never gone back.

Ingredients For Oil-Free Chipotle Mayo
Typically, mayonnaise is made from combining oil, egg yolks, and an acid. If you are wanting to reduce the amount of oil in your diet however, then this recipe is for you! I use soft or silken tofu for my 5 minute oil-free mayonnaise and it's a fantastic substitute that some of our YouTube viewers have called "life changing"!
If you are new to using tofu in your cooking, "The Woks Of Life" has a great post about silken/soft tofu. This post will explain exactly what this variety of tofu is, how to store it, and how to enjoy it.

For this oil-free chipotle mayo you will need:
- 150 grams soft or silken tofu (usually about half of a package).
- ½ tablespoon diced chipotle pepper in adobo sauce.
- The juice of 1 lime or about 1.5 tablespoons concentrated lime juice.
- ¼ teaspoon salt.
- And a touch of garlic powder.
*TIP: if you have leftover tofu in your package you can store the leftovers in a clean container with a lid. Just cover the leftover tofu with cold water so it doesn't dry out and use it within the next 2-3 days. Likewise, leftover chipotle peppers in adobo sauce last for months and months in the fridge. Transfer them to a clean jar with a tight-fitting lid and refrigerate.
Method
Although real mayonnaise can be whisked by hand, a blender will be the quickest way for you to make this tofu based "mayo".
Simply add all of the ingredients to a blender (I actually use my handheld immersion blender) and blend until smooth. Give the mayo a taste and adjust any of the flavours as desired. Add more spice, more acidity, or more salt to taste.
Serve immediately or store in an airtight container in the fridge for up to 4 days.

Recipe Cost For Oil-Free Chipotle Mayo
This vegan and oil-free version of a chipotle mayonnaise makes 150 ml and costs me roughly $2.15 Canadian using a fresh lime. If I were to use lime juice from concentrate then my cost would decrease to under $2.
If I were to buy real chipotle mayonnaise at my local grocery store I would pay about 85 cents per 100ml. This recipe comes it at roughly 70 cents per 100 ml. A store bought vegan and oil-free mayonnaise option would likely be quite a bit more so this recipe is quite thrifty!

Instructions
- Add all ingredients to a blender and blend until smoothly combined.
- Taste and adjust the seasonings as desired. Add a bit more spice, lime juice, or salt to taste.
- Transfer to an airtight container and refrigerate. Lasts well in the fridge for up to 4 days. You may notice a little bit of liquid separating from the “mayo” after it has been sitting in the fridge. Simply give the “mayo” a stir before serving.
Notes
Approximate Cost: $2.15 Canadian using a fresh lime ($1.53 using concentrated lime juice). A store bought version of real chipotle mayonnaise would cost me 85 cents per 100 ml and this recipe works out to around 70 cents per 100 ml.
