Best 5 Minute Oil-Free Mayo - Spread It On!

We can't get over this amazing 5 minute thick oil-free mayonnaise! I never would have thought I'd be making homemade mayonnaise... to be honest, I've never been a fan of traditional mayonnaise. BUT with this recipe... I just want to put mayonnaise on everything! It's:

Thick enough to use right away
Gets even thicker in the fridge
6 simple ingredients
5 minutes
All the zingy, creamy, taste of the traditional!

The Magic Ingredient To This Oil-Free Mayo

Silken tofu!

I can't believe I hadn't tried this earlier. Sometimes it's hard to wrap my head around using tofu in sauces and dips but this recipe blows me away! Make sure that you are using silken or soft tofu. It's the variety of tofu with the highest water content so it will break apart immediately and blend into a completely smooth mayo. If you use medium, firm, or extra firm tofu you will end up with a thick but more textured sauce.

If you've seen our Aquafaba Mayo we use the liquid from a can of chickpeas mixed with 1 cup of vegetable oil to create a mayonnaise substitute. That version thickens up nicely in the fridge, is super tasty, and is a great use for aquafaba!

BUT... this recipe will be my go-to.

  • I find it plenty thick enough to use right away.
  • It's so quick and easy.
  • It's oil-free and just made of protein-packed tofu!

How To Make This Thick Oil-Free Mayonnaise

Are you ready for how wonderfully simple this is?

  1. Open your package of silken or soft tofu.
  2. If there's excess water on top you can pour that out but generally you can add the tofu straight into your blender.
  3. Add the remaining ingredients.
  4. And blend until smooth!

You can use your mayo right away if you are short on time but leaving it in the fridge for at least 2 hours will allow it to chill and thicken even more. I love to make this quick mayo the day before I need it.

The Other Ingredients

This thick oil-free mayo is made out of 6 easy ingredients!

The creaminess comes from:
Silken Tofu

The tanginess comes from:
1 tablespoon Lemon Juice and
Just ½ teaspoon Apple Cider Vinegar

A bit of zing is added with:
And ⅛ teaspoon Wasabi or sub with mustard/mustard powder

And it's seasoned with:
⅛ teaspoon garlic powder and sea salt!

Recipe Cost

This quick, easy and thick oil-free mayo costs us approximately:

CAD $2.14 for 300ml.

Store-bought mayonnaise would cost us roughly CAD $2.12 for 300ml.

It's virtually the same! And if you tend to purchase egg-free mayonnaise you will likely be saving quite a bit with this recipe.

Storing Oil-Free Mayonnaise

This mayo will keep well for 1 week in your fridge.

It may last longer but I haven't tested it past one week. We use it up too quickly! I have noticed in some batches that after 3-4 days a tiny bit of liquid may start to separate but I just give it a stir before using and it's fine.

I often make this mayo for use in a recipe like our "Like Lobster" Roll, Summery Coleslaw or our BBQ Pulled Jackfruit Sandwich. Any leftovers can be used on sandwiches, mixed into other sauces or dressings, or easily made into a spicy mayo for sushi bowls! Just stir in a bit of chilli garlic sauce or sriracha and a drop of sesame oil and you have yourself a super tasty spicy mayo!

Description

Blend up this 5 minute thick oil-free mayonnaise! Packed with protein, full of goodness, so easy, and so tasty! Give it a try!


Ingredients

Units Scale
  • 300g silken tofu (or soft tofu)
  • 1 tbsp lemon juice
  • ½ tsp apple cider vinegar
  • ¼ tsp wasabi or ½ tsp mustard powder
  • ⅛ tsp garlic powder
  • ⅛ tsp sea salt

*All the ingredients for this recipe are from our pantry and freezer tips!


Instructions

  1. Add all the ingredients to your blender or food processor. *Alternatively, try whisking the ingredients by hand if you don’t have a machine.
  2. Blend until smooth. Stop to scrape down the sides of the machine as needed.
  3. Taste and adjust the seasonings to your preference. Add more salt or garlic powder for seasoning, lemon juice or vinegar for tanginess, and wasabi or mustard for zing!
  4. This mayo will be thick enough to use immediately but will get really nice and thick in the fridge overnight!
  5. Store in the fridge in an air-tight container for about 1 week. 
  6. Try it in our "Like Lobster" Roll, Summery Coleslaw and our BBQ Pulled Jackfruit Sandwich!

Notes

Cost Comparison: CAD $2.14 vs. roughly CAD $2.12 for 300ml of store-bought mayonnaise.

After a few days in the fridge a tiny bit of liquid might start separating from the thick mayo but just give it a stir and it should be fine.

    All of the silken tofu I can find comes in 1lb ( 450g ) packages. How could I adjust the other ingredients to fit the increased amount of tofu?

      You would be adding 150 grams of tofu so it will be quite simple actually! Just use 1 and a half times for the other ingredients (instead of 1 tbsp lemon juice use 1 1/2 tbsp, instead of 1/2 tsp apple cider vinegar use 3/4 tsp etc). I hope that works well for you! I usually toss any extra silken tofu into a soup or pasta sauce so that's another option for next time if you feel like using all 450 grams yielded a bit too much of the mayo for you (I'm sure you will find uses for the mayo though!)

    I can’t find soft tofu around here (Ocala, FL), so will try with silken. I just saw your chipotle version today, yum! What are your thoughts on adding a pinch of black salt for a bit of “eggy” flavor that is in regular mayo? If so, how much?

      I'm glad you're excited to try it! I think black salt could be a great addition. I would probably start with a pretty small amount, like an eighth of a teaspoon and add more to get to your desired taste. It's always easier to add more than to try and balance the flavour back out if you go too far with it. I'll have to give that a try with my next batch too. Let me know how you like it when you try it!
